Rwanda bird’s eye berbere (chile de arbere) is one of the main members of the capsicum family plants that thrive naturally in Asia and the horn of Africa (especially Ethiopia). It is as capsaicin-rich as its red hot chili counterpart when it has ripened. Its scoville heat units (SHU) reach 100,000 to 225,000. In appearance, the chili is small and thus the name ‘bird’s eye.’
The origin of bird’s eye chili is like the rest of the pepper family from Mexico and other parts of the Americas.
Eating food pickled with bird’s eye berbere offers the same qualities as its family members including chili peppers, ginger, fenugreek and garlic. This includes high vitamin C content for protection against diseases.
We source Rwanda bird’s eye berbere from family growers with less than two acres of land in Busera district among other districts of Eastern Province. We ensure that our sources strictly follow the low use of chemical sprays. We also make sure that they only use farmyard manure as soil enrichment instead of commercial fertilizers.
We begin to pick the crops after two months or 80 days after transplanting the seedlings. We harvest Rwanda bird’s eye berbere at dawn so that there will be enough time ahead for same-day drying and processing. We, first of all, cut the small oval-shaped pods with garden scissors with parts of their stalks intact. We then put them into baskets for delivery to the shed for drying. The harvest can go on at short intervals for the next three months.
Before drying, we wash the harvested pods of Rwanda bird’s eye berbere in chlorinated water in a deep tank. The tank contains decontaminants to kill germs. After rinsing the produce, we sort only the healthiest, unwrinkled pods for the drying phase.
We dry the harvested Rwanda bird’s eye berbere by either traditional upside-down hanging of whole plants in a shed or air drying them. We air dry the cone-shaped 2-to 3-centimeter long pods on our artificial drying plants for several hours.
We pack the dried Rwanda bird’s eye berbere in 4.5-kilogram produce boxes including cartons and plastic crates. Every box consists of plastic linings that maintain a modified environment interior inside each box. All the packed pods are yet to ripen fully, are greenish-red in color and are firm. Alternatively, we offer ground chili powder that we pack in packets or sachets of 250 grams and above. These transparent packets show off the powder. We stick self-adhesive labels in each box inclusive of the name of the produce/byproduct, packing date, expiry date (for the powder) and the country of origin.
We store Rwanda bird’s eye berbere cargo at the temperature of 7 degrees Celsius as anything below this leads to chilling injury. We also keep the relative humidity at less than 95%. This maintains the cargo fresh for the next 21 to 65 days. The gradual ripening of the produce can be done at 20 to 25 degrees Celsius.
