Chocolate is one of the earliest methods of trade dating from early 1900 BC. Zambia chocolate is the main ingredient in making snacks such as cookies, milkshakes, yogurt, cakes, biscuits, Etc.
Chocolate is created from the cocoa bean derived from the cacao tree. (Obroma cacao). The tree is native to the Amazon. The cacao tree thrives in a humid and warm area near the equator. It produces bumpy fruits of the same size as a pineapple. The fruits are full of cocoa seeds covered in a white pulp.
Chocolate dates way back from 2000 years ago. It was first used to manufacture drinks. During those times, chocolate was used as currency. It was also used for rituals as it was thought to contain mystical properties.
In 1815 a Dutch physicist discovered the cocoa powder and also the chocolate bar. It was later adapted in Zambia in the 1900s. In Zambia, most of the chocolate food products made from cocoa beans are consumed a candy used to make beverages and also to flavor coat bakery products. Chocolate products are rich in carbohydrates and also a quick source of energy.
There are three types of chocolates in Zambia.
Dark chocolate: This contains chocolate liquor, cocoa butter, lecithin, sugar, and vanilla.
Milk Chocolate: It contains chocolate liquor, cocoa butter, sugar, milk fats, milk solids, lecithin, and vanilla.
White chocolate: This one contains everything in milk chocolate except chocolate liquor.
The cultivation of cocoa trees happens in the Northern region on Zambia as it is warmer and humid.
The cacao tree needs temperatures between 21 and 23 degrees Celcius and rainfall amount of up to 2500mm per year.
After planting of cocoa seeds, it takes around four years to yield the first crop. At maturity, the pods do not ripen together; hence harvesting is done all year round.
Harvesting involves removing of ripe pods from the trees and extracting the pulpy beans. It is usually done by hand.
In Zambia chocolate is usually packaged in aluminum foil or composite films. It s also packed in plastic paper or trays then packed in cartons. For transportation, it is put in containers then refrigerated to avoid melting.
