Tomatoes were initially grown in central and south America. Morocco is the world’s largest tomato producer and exporter. The output of tomatoes for export in Morocco in 2015\2016 was one hundred thirty million tonnes. They are three types of tomato production firms in Morocco: industrial, premier and seasonal tomatoes. Premier tomatoes are grown for export with most of the products destined for markets in Canada, the European Union and Russia among others. The export of Morocco tomatoes has increased by 50% over the past 10years.

The scientific name for tomatoes is Solanum Lycopersicum. The fruit grows well in temperate climates, and the best yields are realized in greenhouses. They are red berries, and they are consumed both raw and cooked.

The plant grows up to 3metres in height. Tomato stems are weak, and therefore support is provided for the plant to stay off the ground. Tomatoes are perennial plants, but they are grown as annuals. The size of tomato fruit is 0.5 to 4 inches, and it is determined by the type planted. 

The premier tomatoes are grown in Casablanca, Temara-Skhiratand and Moulouya regions of Morocco. The seasonal tomatoes are produced in small scale farming in areas along the Atlantic coast, and they are mainly for local consumption. The quantity and quality of the seasonal product are much lower than that of premier tomatoes. Industrial tomatoes are for industrial use in the processing of tomato concentrate and tomato sauce among other products. Industrial tomatoes are primarily grown in Beni Mellal, Marrakech and markets regions.

There are over 7500 varieties of tomatoes grown across the world. The varieties grown in Morocco include Daniella and Gabriella among others. Tomatoes are planted in seedbeds from where they are transplanted after 30days. After transplantation, the plant takes between 60 and 90 days before harvesting.

The planting season of tomatoes in Morocco in July and August while harvesting takes place over six months from November to May. Collection of the fruit is manual when they are mature and in other cases when fully ripe. Tomato fruits are green, and as they mature the colour changes to greenish-yellow. Ripe tomatoes are bright red. For export, the fruit harvesting takes place when mature but unripe.  

Harvesting is done by gently twisting the fruit off the stalk. Tomatoes are not stored refrigerated as they spoil and lose quality. Ethylene gas helps in the ripening process, though such products are of poor quality. Tomatoes are a healthy food due to their high content of antioxidants. They also contain vitamins A, C and K, iron, calcium, potassium, and folic acid. 

After harvesting, tomatoes are sorted, graded and stored unwashed at room temperatures away from direct sunlight. They are stored stalks facing downwards for prolonged life. Tomatoes are packaged in baskets, PP\PET cups, trays net bags and film of different sizes.
