There are at least three plant-based sources of molasses in the Netherlands: sugar beets, sorghum cane and sugar cane. Two popular commercial choices include:
1. Sorghum Syrup/Molasses

Sorghum syrup or sorghum molasses is an old-fashioned sweetener. It is the end product of crushing and boiling sweet sorghum cane molasses without waiting for it to crystallise into sugars. This first lees of boiled stripped cane is usually a clear dark syrup and unrefined.
This is the finest grade, only a little bit sour in comparison with cane molasses. It is good for baking and eating with pancakes. No wonder some call it “baking molasses.”
2. Blackstrap molasses and HTM
Current price: From EUR 6.5 ($6.94) per litre/EUR3.90 per 600ml to EUR 28 ($29.92) per litre
In cane molasses extraction, there is a first boiling stage which produces first molasses such as the above sorghum molasses. After the first and second sugar processes are over, the third refining stage produces yet another byproduct: blackstrap. It is dark and has little sugar in it but it is highly nutritious. Organic blackstrap molasses is a rich, aromatic syrup filled with mineral and vitamin residue. It is good as food additive.
High-test (HTM) organic molasses, on the other hand, is a dark syrup with a brix value between 80 and 84%. HTM has lots of sugar still remaining in it. Therefore, it is an inverted cane syrup due to its high sucrose.
