Why is caviar so prized?
Seafood gourmets prize the golden-to-light grey roe of sturgeon that makes caviar courtesy of its creamy texture and walnut’s taste. Caviar is rich in cholesterol (196%), magnesium (75%), iron (66%) and protein (50%).
Secondly, it takes 6 to 8 years for farmed sturgeons to mature and 15 to 32 years for sea sturgeons to reproduce. Since fishermen only harvest the roes and eggs, they have no choice but wait this long! The wait, in turn, attracts dynamic price changes.
Popular caviar in South Africa
Caviar in South Africa comes from specialty companies that offer the following few popular types:
1. Beluga Caviar
Current price: from ZAR2,035 for 15 g to ZAR 5,895 for 50g ($6,398 per kg)
Beluga caviar comes from the largest sturgeon, Beluga (Huso huso), which is native to the Caspian and Black seas but is extinct in the Adriatic Sea. It weighs up to 1200 kg for mature males. It is among the most endangered species on earth with a “critically endangered” status. Its large eggs (3.2 mm diameter) have been dinner fare in shahs’ and nobles’ tables for years.
2. Asetra Caviar
Current price: from ZAR 1,189 for 15 g to ZAR 6,139 for 100g ($3,333 per kg)
Prized for its soft texture, mild aroma, sweet nuances and hazelnut highlights, Asetra (A. gueldenstaedtii) espouses a brilliant brown tinge. The egg size of this type is medium, at 3 mm in diameter.
3. Imperial Caviar
Current price: from ZAR 455 for 30g to ZAR 2,209 for 50g ($2,398.21 per kg)
With its dynamic flavour with delicate nuances, caviar from the Imperial sturgeon (A. baerii spp.), is highly treasured. The tinge of the prepared roe is a golden brown, similar to the eggs, which are between medium and large in size.
4. Royal Caviar
Current price: from ZAR 792 for 15g to ZAR 3,789 for 100g ($2,056 per kg)
Delicacy of taste and pronounced aroma are two words that describe the taste of Royal caviar from the A. transmontanus species of sturgeon. It should be your starting caviar for it is mild-flavoured, and it is in the classic grey tinge of most caviar. It has medium to large eggs. Furthermore, it costs cheaply for small slices, though it becomes extremely expensive as size increases!
5. Other caviar
Current price: from ZAR 149.99 per 50g ($162.8 per kg)
Other popular and low-priced caviar apart from sturgeon’s include trout caviar. Though it is no true caviar in the classic sense of the word, it tastes just as nice as sturgeon’s. Furthermore, it is a slash of the price.
