What is Abalone?
Abalone are diverse species of marine snails. The largest are red abalone (Haliotis rufescens) from the Pacific coast of the US. They measure 30 cm long. Various species differ in colour, which ranges from red and green to white, among other tinges.
Abalone live in shells measuring up to 17 cm that accommodate their rounded ball-like bodies. Gourmets around the world prize these creatures’ meat for its buttery and salty flavour.
Does South Africa have Abalone?
South Africa propagates abalone through land-based hatcheries. The main local species in South African aquariums is H. midae. Since the start of the 1990s when this aquaculture industry began, numerous farms have been harvesting 850 tonnes of the species per year. It takes around 10 years for local hatched abalone to be ready to harvest, hence their high prices!
“Perlemoen” or Abalone
“Perlemoen” instead of abalone is the local popular name for these sea snails. It means mother-of-pearls in the Afrikaans (South African Dutch) language. Given the precious nature of the snails, locals use the same name to refer to abalone.

Sales of abalone in South Africa offer abalone in either live, frozen or brine form. Either way, there are two methods of selling abalone in South Africa, namely, in live boxes or in frozen boxes. Live abalone comes in oxygen-filled boxes to retain their freshness. Each box contains half a dozen 90-to 110-gram snails in shell. Frozen abalone boxes, in their part, are airtight or in other words, vacuum packed to preserve the freshness of the frozen out-of-shell meat.
Canned abalone in brine constitutes the snails in a solution of water, salt and phosphate. Whole abalone out of shell preserved in brine cost a 1/3rd more than their live companions, in South Africa. They come in cans of around 400 grams and above, containing at least five whole abalone.
It is essential to note that dried abalone weigh far less than their canned weight.
