What is Sea Bass?
Sea basses are a range of marine fish from diverse families and species but which nevertheless go by the same name. The most common species sold in Canada are Dicentrarchus labrax and D. punctatus.
Worldwide, sea basses can be as small as just several centimetres to 2 metres long. They also range from just a few pounds to 500 pounds in weight. The exception is the giant goliath grouper or Epinephelus itajara species that reaches 900 pounds.
Though Canada prides in high lobster, crab and salmon exports, it is a net importer of sea bass. In 2021, the country imported US$263,000 of sea bass.
The main import sources, according to a World Bank report of 2018, are Argentina, Portugal, Turkey, Cyprus and Greece.

3. Fresh scaled and gutted sea bass: this frozen fish sells by the half pound or such measures as 600 to 800 g in most stores. It is among the least costly, as it is almost a 1/5th of the price of the Chilean import.
