During the sugar milling process, a dark syrup remains behind after sugar has crystallised. This by-product is molasses, a food additive and animal feed in Australia.
According to the Australian Sugar Milling Council, Queensland accounts for 95% of all raw sugar production in the country (2021 figures). In 2021, Australia ranked 7th among world exporters of molasses worth US$60.2 million.
The molasses and sugar milling industry also accounts for 2% of all renewable energy generation in Australia (2021 figures). In Queensland, 27% of electricity comes from sugar mills which generate molasses.
Types of molasses in Australia
There are three plant-based sources of molasses in Australia: citrus, sugar beet and sugar cane. Sugar cane molasses fall into three types:
1. Unsulphured First Molasses
Current price: from A$13.16 (US$8.43) to A$24.99 (US$16) per litre
Unsulphured molasses in Australia is made from the very first sugar extraction process. This first lees of boiled stripped cane is usually a clear juice that is fully concentrated. This is the finest grade of molasses because it comes from mature canes that have undergone sun-ripening.
2. Sulphured First Molasses
Current price: A$ 10.95 (US$7.01) per litre
When raw green cane goes into the mill for first extraction, it produces a dark syrup that millers mature with sulpur fumes. Though not the top grade, it is still good and clear.
3. Blackstrap Third Molasses
Current price: A$9.98 (US$6.39) per liter
After the first and second sugar extraction processes are over, the third extraction and boiling produces yet another byproduct: third molasses or blackstrap. It is dark and has little sugar in it but it is highly nutritious.
4. Organic HTM and Blackstrap Molasses
Current price: A$2.03 (US1.30) per litre
Any dark syrup with a brix value between 80 and 84% falls under the term high-test (HTM) organic molasses. In Australia, HTM has lots of sugar still remaining in it. Therefore, it is an inverted cane syrup due to its high sucrose. Organic blackstrap molasses, on the other hand is a rich, aromatic syrup filled with mineral and vitamin residue. For this reason, it is used as a natural food color additive.
