Canadian lobster options
Canada lobster comes in three forms: live, frozen or prepared meat. The live and prepared options are the costliest, while frozen, which is available whole or in per-pound measure is the most accessible.

There are two types of these lobsters to select:
Wild caught hard shell lobster, which according to Royal Greenland, has firm red exoskeleton, delicate white meat and unique aroma. The hard shells thrive mainly in Newfoundland and Nova Scotia waters.
Wild caught soft shell lobster, on the other hand, has more tender meat than the hard-shelled one and is great for frozen cooking
When it comes to size, most customers prefer Atlantic “halves.” These come from the Atlantic coast of PEI and New Brunswick. Weighing 1.61 ib (680-793 grams) on average, these halves are easily the least costly per-pound pricing offers in the Canadian lobster market.
