The Tuna Ecosystem
Tuna are a highly migratory species that abound in cold waters. In Canada, two regions provide this fish, including the Northern Atlantic and Pacific Northwest.
Because of thriving in the cold pristine oceans, tuna are usually low in mercury because the selenium in the water balances metallic contamination. This makes the fish 100% sustainable especially in nutrition, with their high omega-3 fatty acid content.
The four biggest commercial species have the ability to grow to a full weight of between 600 and 1000 pounds in this cold environment. Smaller species can weigh around 9 kg when fully grown.

There are five major types of tuna that you will mostly find find in Canada. These are the Thunnus thynnus, Thunnus alalunga, Thunnus albacares, Thunnus obesus, and Katsuwonus pelamis.
1. Thunnus thynnus

Popularly known as Atlantic bluefin, this is the largest among the commercial tuna species in North America. It is a gourmet’s favourite for its huge flakes, mild flavour and meaty content. Sushi restaurants always go for it due to its firmness and flaky texture.
2. Thunnus alalunga
Current price: US$25.12 to CAD118.63 (US$86) per kg
Best known as albacore or true tuna, this is one of the most common commercial tuna species in both the Pacific Northwest and the Atlantic. Its medium size makes for tasty fillets with soft texture and flaky characteristics. Its high fat content makes for a good grilling experience while its meat sits in the mouth firm and delicate.
3. Thunnus albacares
Current price: US$20 to CAD 90.31 (US$65.47) per kg
Popular as yellowfin tuna, this commerical species is popular thanks to its firm, soft and fatty meat. Indeed, some eat it raw with a sashimi dish. Even better, it makes for a perfect sushi meal due to its slightly moist, meaty flakes.
4. Thunnus obesus
Current price: CA 40.7 (US$29.51) per kg
Common as bigeye tuna, this species is bigger than yellowfins and great for sashimi dishes due to its firm, meaty and fatty flakes.
5. Katsuwonus pelamis
Current price: CAD20.5 (US$14.53) per kg
Common as Skipjack tuna, this is the smallest of all commerical tuna species and the most abundant. It has a soft white meat that is close to that of yellowfins but a far cry from the other firm bigger species. It is best for canned food and you can find it all around Canada’s supermarkets in tins.
