What is Sea Bass?
Sea basses are a range of marine fish from diverse families and species but which nevertheless go by the same name. The most common species sold in Canada are Dicentrarchus labrax and D. punctatus.
Worldwide, sea basses can be as small as just several centimetres to 2 metres long. They also range from just a few pounds to 500 pounds in weight. The exception is the giant goliath grouper or Epinephelus itajara species that reaches 900 pounds.
Though Canada prides in high lobster, crab and salmon exports, it is a net importer of sea bass. In 2021, the country imported US$263,000 of sea bass.
The main import sources, according to a World Bank report of 2018, are Argentina, Portugal, Turkey, Cyprus and Greece.
Sea bass farming in Canada
Farmed sea bass has become an attractive aquarium opportunity for fish farmers in Nova Scotia. A government-sponsored project began in the province in 2008. With it, fish farmers can obtain loans to begin the sustainable practice of raising sea bass at home.
Buying sea bass in Canada
Current price: from CAD 10.69 (US$7.80) per kg for white sea bass to CA$47 (US$34.31) per Ib for Chilean sea bass
You can choose to buy by variety or by such metrics as fresh, gutted, frozen or imported sea bass. Each option has its price tag. The most popular options in fish markets and retail stores include:
1. Chilean sea bass: the price of this import from the Pacific waters of Chile is around 47 Canadian dollars per pound in 2023.
3. Fresh scaled and gutted sea bass: this frozen fish sells by the half pound or such measures as 600 to 800 g in most stores. It is among the least costly, as it is almost a 1/5th of the price of the Chilean import.
2. Whole sea bass; because sea basses vary in size, whole sea bass prices in Canada vary by the species and size. Rare species like giant sea bass cost more than common types. A 1.5 kilo whole white sea bass, for example, starts at 16 Canadian dollars or CA$10 per kilo while wild striped sea bass goes for 37 Canadian dollars for a full 2 kg weight.
